Why Wedding Cake is Dry!

When we got married, I wanted my wedding cake to taste good. Most wedding cakes look great, but they don’t taste good. Why was that?

I went to my Aunt, who baked the wedding cakes for all the family weddings … and all the neighborhood weddings for that matter … to find out how to make a great-tasting wedding cake. She told me that the problem with most wedding cakes is that they are too dry.

Wedding cakes usually call for a large number of layers, stacked one on top of the other. The bottom layer needs to support the weight of all those other layers - including the frosting and decorations! Most cakes are baked until they are too dry to taste good, just so that the cake will stand up straight.

The leaning tower of … cake

I decided to compromise on the appearance in order to have a wedding cake that tastes good. So I asked my Aunt to make the wedding cake, and she made it to taste good, not necessarily to stand up straight.

And it didn’t stand up straight. It tilted. Like the leaning tower. So I just turned the cake so that it leaned toward the corner of the room and away from all those guests with cameras. It tasted great, and it didn’t look too bad, if you looked at it from the right angle.

Wedding Cupcakes to the Rescue!

If I were to do it again, I might try using cupcakes instead of a traditional wedding cake. People love cupcakes, and serving cupcakes is certainly easier than the tedious process of “deconstructing” that cake tower for serving to guests. There are great-looking cake stands available that will make a great appearance … fill them up with cupcakes, instead of traditional cake. They’ll look great, and the cupcakes will taste great too!
